I am a big advocate and supporter of Pie Day. I suck at the math, but I'm pretty good with the pastry! I didn't used to be. In fact the first few attempts I made at pie crust were just terrible. I wanted to give up quite a few times and just relent to buying the frozen pie crust at the store, but I'm glad I didn't.

Pie Day this year lands right smack in the middle of my "A Month without Grocery Shopping" challenge. Does that mean I don't have what it takes to make pie on Pie Day? Heck no! Because I always have the baking basics on hand (flour, sugar, butter, eggs, etc), I have all the ingredients necessary to make one of the following pies: apple, lemon, or blueberry. I went with apple.
A couple of months ago, I bought a bag of apples from Costco and made apple pie filling from scratch. I separated the filling into zip lock bags and froze them (it's good frozen for up to a year!). I make two different things with apple pie filling: apple chimichangas, and pie. Both are amazing and you should definitely try both. But maybe not at the same time cause you might die of fat overload.
Anyway, here's what I did. I made the pie crust, took a quarter of it and set aside, while I rolled the rest onto my pie plate. I unrolled the rest of the crust, took a cookie cutter, and made little flowers to lay on top. I sprinkled the flowers with cinnamon sugar. After the crust was set, I assembled: I thawed the pie filling, spread it onto the crust, then laid the flowers on top. I covered the crust edges with foil and baked the whole thing at 375 degrees for 25 minutes. I then removed the foil and continued baking for 25 more minutes.
That's not all! I like my pies a la mode, but I don't have ice cream. However, I do have heavy whipping cream, so I made homemade whipped cream that was delicious!

1) Make your pie crust. Reserve a quarter of the pastry dough to decorate the top of the pie. I used a flower cookie cutter. If desired, sprinkle cinnamon sugar over the decorative dough. Freeze for 30 minutes to set.
2) Take crust out of freezer and spread pie filling over the crust. Top with cut out dough and cover the edges of the crust with foil.
3) Bake at 375 for 25 minutes. Remove foil and bake for 25 to 30 more minutes. Remove and let cool.
4) Top with whipped cream and enjoy!
